These artisanal hand rubbed, slow-cured meats are based on original 160-year-old family recipes that were handed down over 4 generations to founder, Oliviero "Olli" Colmignoli. They are made with pork from heritage breed pigs raised on family-owned sustainable farms in Virginia. The pigs are humanely pasture-raised and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products).
Choose from four flavors - Calabrese (spicy with cayenne pepper and paprika), Molisana (robust with black peppercorn and garlic), Napoli(applewood smoked), and Norcina (mild and simply seasoned).
